Method
1. Heat enough oil in a pan, to cover 1 to 1.5 inches, to 360 degrees F.
2. Make the churro dough;
heat water, margarine and salt to the boil in a saucepan; stir in flour.
3. Stir vigorously over a
low heat until the mixture forms a ball, which should be about 1 minute; then remove from heat.
4. Beat eggs together until
smooth and then add to the saucepan while stirring mixture.

Vegetable oil 1 cup water 1/2
cup margarine or butter 1/4 teaspoon salt 1 cup all-purpose flour 3 eggs 1/4 cup sugar 1/4 teaspoon ground
cinnamon (optional)

5. Spoon the mixture into
a cake decorators' tube with a large tip.
6. Squeeze 4-inch long strips
of the dough into the pre-heated oil. Fry 3 or 4 strips at a time until golden brown, turning once, about 2 minutes on each
side.
7. Drain on paper towels.
8. Mix the sugar and cinnamon
together and 'frost' the churros in this mixture before serving.
