Method
1. Reserve some of the cucumber, onion, and peppers to be diced and
served as garnish.
2. Put all the ingredients into a blender and blitz to your desired
consistency. Some like the soup to be chunky, whilst others prefer a smooth texture.
3. Put the blended mixture into a glass bowl with some ice cubes, and
chill in the fridge for a minimum of an hour.

Ingredients
21 oz tomatoes
1 fresh Chilli seeded
2 cloves of garlic
2 onions
2 red and green peppers
1 cucumber
7 tablespoons olive oil
2 tablespoons red wine vinegar
1 1/2 tablespoons of water
1 teaspoon cumin
Bread for toast

4. The flavour will improve over time and can be prepared up to a day in advance.
5. Serve in bowls with the reserved garnish and toasted bread, add an
ice cube or two to each bowl if desired.
Variation: Adjust the chilli and/or cumin to suit your taste. Some people add tabasco as seasoning.
